Daddy Jun's Pasta Sauce
My kids love pasta and meat sauce! Follow this recipe to see my husband Jun's take on a red sauce that's packed with vegetables. It's sure to please everyone in your family (and use up any random vegetables in your fridge!).
Ingredients
2 cans San Marzano tomatoes, crushed
1/4 cup EVOO
2 bay leaves
2 cups diced carrots
1 cup diced celery
1 onion, diced
4-5 cloves garlic, crushed
1/2 tsp salt
pepper to taste
1 lb. organic free-range lean ground beef (we like 90% sirloin or bison)
Approx. 4-6 cups of any chopped vegetables that need to be eaten (this rendition used romanesco, baby broccoli and baby eggplant)
2 tsp dried Italian seasoning
1 cup frozen peas
Directions
Saute EVOO, carrots, celery, onion and garlic in a large pot on medium heat until slightly softened. Add tomatoes, salt and bay leaves and allow to cook down uncovered on medium-low for about an hour. Meanwhile, saute remaining vegetables and meat until cooked thoroughly, about 10 minutes. Add the meat mixture and frozen peas to the hearty marinara. Serve with pasta or a whole grain of your choice. Enjoy!
