Summer Mango Avocado Salsa

 

I love a ripe mango! The sweetness of mango combined with a kick of red onion balanced by creamy avocado make this salsa a must-have at your next gathering.

What makes this recipe special is the use of “sea vegetables,” which are  naturally occurring iodine-rich plants from the ocean. With the advent of more specialty salts into our diets, most of us are not using traditional iodized salts these days. This means many of us are a little under-supplemented with iodine. Iodine is important primarily to healthy thyroid function.

Dr. Katie’s Life Kitchen Tip: I use sea vegetables as an alternative to salt and other spices. The brand I use is Maine Coast Sea Seasonings – try Kelp or Dulse or another variety. Keep it next to your salt and pepper shakers to encourage use in the kitchen.

Pair this dip with organic plantain or corn chips. It’s also delicious as a topping to brighten up salads or grilled seafood.

Serves 6-8

Ingredients

2 mangoes, cubed

2 avocados, cubed

½ medium red onion, very finely chopped

¼ cup chopped cilantro

1-2 small limes, juiced

½ lime zested

1-2 tablespoons extra-virgin olive oil

1 teaspoon Maine Coast Sea Seasonings

¼ - ½ teaspoon salt (I like kosher salt)

½ teaspoon ground black pepper

1 teaspoon ground cumin

Organic plantain, tortilla chips (like Siete) or seed crackers (like Mary’s Gone)

Directions

Mix ingredients in a bowl and serve immediately with organic plantain, tortilla chips or seed crackers.
