Black Bean Brownie Bites

Using fiber- and protein-rich black beans are a genius move in this sweet recipe. Black beans allowed Chef Maddie to create the cakey-texture of a traditional brownie, but without gluten - what a feat! If you struggle with digesting beans, consider buying the brand Eden Organic because they are pressure cooked with kombu, considerably lessening the woes of phytic acid in our bodies.

Consider these nut-free, dairy-free, gluten-free treats for school snacks and lunches, or a well-balanced treat the next time a friend comes over for a cup of tea.

Ingredients

1 (15-ounce) can of black beans, drained and rinsed

2 tablespoons cacao or cocoa powder

½ cup quick oats

¼ teaspoon salt

⅓ cup pure maple syrup

¼ cup unrefined coconut oil

2 teaspoons baking powder

½ cup mini dark chocolate chips (dairy free, if desired)

Gold sugar for dusting (optional)

Directions

  1. Preheat oven to 350 F. Prepare a mini muffin tin with 24 cupcake liners.

  2. Combine all ingredients in a food processor and blend well until completely smooth

  3. Us a cookie scoop or spoon to divide the batter equally amongst the muffin cups.

  4. Sprinkle approximately 4-6 mini chocolate chips on each brownie bite and a very modest amount of gold dusting sugar,

  5. just to achieve the effect and not for taste.

  6. Bake for 15 minutes. Remove from the oven and let cool for 10 minutes. When cool, ease the brownie bites out gently with a table knife so as not to disturb the chips and gold dust.
