Superfood Nut-Free Granola

Tigernuts are a great alternative for those who want a fiber-rich, nutrient-dense grain-free, nut-free alternative. Buying them whole is tough, because  you have to soak them in order to eat. After all, they are little tubers…and that requires a bit of chewing action.


But - voila - you can buy sliced tigernuts, and they have the consistency of rolled oats! Try them as a substitute the next time you make cookies as a healthy alternative that packs a bit more balance in the form of fiber, fat, and protein all in one package.


This recipe is called Superfood Granola because it combines the power of collagen peptides to provide a solid amount of protein and gut-protecting, skin-elasticity-enhancing fortitude into your breakfast or snack options. Combined with hemp seeds which are rich in omega-3-rich fats and some delicious anti-oxidant flavonoids from low-in-sugar cacao nibs, and you’re in business for a healthy pep in your step.


Ingredients

1 cup sliced tigernuts

½ cup shredded coconut

½ cup shelled hemp seeds

½ cup collagen peptides

¼ cup cacao nibs

⅛ teaspoon sea salt (optional)

¼ cup avocado oil

2 tablespoons maple syrup

1 teaspoon vanilla extract


Directions

  1. Preheat the oven to 275F. Line a baking sheet with parchment paper.

  2. Place the dry ingredients in a medium bowl and stir to combine.

  3. Combine the avocado oil, maple syrup, and vanilla extract in a small bowl. Stir into dry ingredients and mix thoroughly.

  4. Bake in oven for 50-55 minutes, stirring approximately every 15 minutes, until golden brown. Cool completely over several hours. Store in an airtight container for several weeks.
