Chili Lime Cucumber Slaw

Cilantro & Coriander

Cilantro is my go-to herb for detoxifying the body. It’s a natural way to lessen the load of heavy metals and reduce oxidative stress on cells. And it also keeps blood sugar more even-keeled! Plus it tastes so yummy…to most of us. If cilantro tastes soapy to you, consider adding some coriander to the Chili Lime Dressing as an alternative so that you can get this detoxifying herb in your system.

Serves 6

Salad ingredients

10 cups mixed shredded cabbage and sliced cucumber

1/2 jalapeno or serrano pepper, thinly sliced (optional)

1 cup cilantro leaves (see notes)

4 scallions, whites and greens chopped

Chili Lime Dressing

1/2 cup extra-virgin olive oil

1/4 cup lime juice (about 3 limes, juiced)

1 1/2 tablespoons honey

4 cloves garlic

3/4 teaspoon fine sea salt

1/2 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon ground cumin

Black pepper, to taste

Directions

  1. In a large bowl, toss the cucumbers, cabbage, cilantro and scallions.

  2. Make the Chili Lime Dressing in a blender by combining oil, lime juice, honey, garlic, salt, paprika, chili powder, and cumin. Blend until smooth.

  3. Use enough dressing to coat. Both leftover dressing and dressed slaw will keep in the fridge for several days.
